Since Mom had some canned pumpkin on hand, we were able to make the bread (thanks Mom!). So the Princess and the Pea will have to share the spotlight with Cinderella this week.
Subjects covered: reading, math, home ec.
Anyway...here are some pics and the recipe for the bread.

Organic pumpkin - it does a body good!
The finished product...with a few pieces missing (kind of like Cinderella's glass slipper)
And, the recipe (adapted from Better Homes and Gardens)
Cinderella's Pumpkin Bread
2 c. flour
1 c. turbinado sugar
1 T baking powder
1 tsp. cinnamon
scant 1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. nutmeg
1/8 tsp. ginger
1 c. canned organic pumpkin
1/c. unsweetened soy milk
2 eggs
1/3 c. veggie oil
1/2 c. raisins.
Mix all the ingredients, except the raisins, together until combined. Stir in raisins. Pour into greased bread tin and put in 350 degree oven for 60-65 minutes.
