Chicken and Orzo Bake
2 1/4 c. water
1/2 tsp. salt
1 c. orzo (type of pasta that looks like slivered almonds)
1/2 c diced red pepper
2 c. cubed cooked chicken
1/4 tsp tarragon
1/2 tsp basil (fresh is best)
pepper to taste
2 T white wine (optional)
1/4 c parsley, chopped
1/2 c chopped onion
1/2 c. plain yogurt
Bring water to boil and add salt, orzo and red pepper. Reduce heat and cook uncovered until orzo and pepper are tender (about 10-12 min). Stir in remaining ingredients (except yogurt) and put in casserole dish. Fold in yogurt and cover casserole. Place in 350 degree oven for 25 minutes until flavors blend.
Super Yummy Black Bean Dip (or use as filling for fajitas, taco salad, tacos)
3 T olive oil
1 medium yellow onion, finely chopped
2 cloves garlic, minced
1 tsp cumin
3 c black beans
3/4 c salsa
shredded cheese
sea salt, to taste (start with a 1/2 tsp and gradually add more til you think it tastes good. I think I add about 1 tsp but can't remember for sure)
pepper to taste
Saute onion and garlic in oil until tender. Add in cumin, beans, salt, pepper and salsa and cook until heated through. You can mash the beans as much or as little as you like. I usually keep this a little more chunky. Top with cheese.
