Recipe: Great Snack Mix


Found this recipe in Family Fun magazine. It's a cinch to make up.


"Sticks and Stones" Snack Mix

4 T butter or soy butter
1/2 c thawed oj or apple juice concentrate*
1/4 c brown sugar or pure maple syrup
2 tsp cinnamon
3 c oat square or corn chex-like cereal
2 c pretzel sticks
1 1/2 c sliced almonds
1 c raisins, craisins, dried cherries or a combo of these

*I like it with the apple juice, but if you like something with a little tang to it, use the oj.

Mix first four ingredients together. Mix together cereal, nuts and pretzels. Pour liquid over dry mixture and toss to coat. Bake at 300 degrees for 30 minutes, stirring every 10 minutes. Remove from oven and stir in fruit. Pour onto a plate to cool (otherwise, as I discovered, it sticks to the pan). Also, because I didn't read my own instructions, I discovered that you can add the fruit along with the cereal, nuts and pretzels and bake it and it still tastes good!
