Date Crunch

Came across this gem of a recipe in a "Cooking for Your Vegetarian Kids" cookbook when I was looking to make a dessert for Lauren's birthday a couple of years ago. Warning: DO NOT make this dessert unless there are more than three people in the house to consume it or Jesus has given you serious victory over resisting irrestible desserts. (Dad and Mom can testify because they ate a whole batch themselves!) Lauren - only 18 more days to go!


Date Crunch

8 oz. Annie's bunny grahams (any variety)
1/2 c. chopped, pitted dates
1/2 c. raisins
2 tbsp. honey
6 tbsp. butter or soy butter
5 oz chocolate (I like using a combination of 3 oz unsweetened and 2 oz semi-sweet chocolate - anything else seems too sweet once everthing is combined. Though you could also try dark chocolate)

Crush bunny grahams. Finely chop dates and add to graham mixture along with the raisins. Melt butter with honey. Pour over crunch mixture, mix well and press to flatten. Chill 1 hour. Melt chocolate and pour over chilled mixture. Chill again until set, then dig in.
